READ-side answer to “why is this field undefined on every workout?”, without a device.

Returns the Workout FIELD names — not scope names — whose gating read scope is 'denied' or 'undetermined'. 'undetermined' is the load-bearing half: it is the exact shape of the read: ['workouts'] trap (never asked), and an implementation that only looked for 'denied' would miss the trap entirely.

It returns ONLY what we positively know:

• 'unknown' NEVER produces an accusation, so on iOS this always returns [].
• On an unavailable / updateRequired platform it returns [].
